This is my favorite soup from Zupas, so I decided to re-create it.
Ingredients:

chicken broth

butter

cauliflower

onion powder

sharp cheddar cheese

heavy cream

Directions:
In a saucepan combine the chicken broth, butter, cauliflower, onion powder, and garlic powder.
Simmer on the stove for 5-10 minutes until the cauliflower is soft.
While the cauliflower is simmering grate the cheese.
Put everything from the pot into a blender and blend until smooth.
Go slow, because the hot liquid will make the lid fly off and create a huge mess.
Return to the pan and add the cheese. Stir until all the cheeses is melted.
Add the cream and add salt to taste.
Note:
Do not use grated cheese from the store. It has an anti-caking agent on it.
